How to Use:
- Prepare and roll a pasta sheet large enough to cover the length of the Marcato ravioli tablet twice. The Atlas 150 Pasta Machine would be an excellent choice for this. (Marcato tip for making the best ravioli: “prepare pasta dough with flour and room temperature eggs, roll a thin and even sheet, and seal the filling to avoid it from bursting during cooking”)
- Dust one side of the rolled out pasta sheet with flour (the Marcato Flour Dispenser would be an excellent choice for this)
- Prepare ravioli filling of choice
- Cut two pieces of the pasta sheet that are each long enough to cover the length of the tablet
- Heavily dust the surface of the tablet with flour
- Place one of the two pasta sheets onto the tablet with the floured side facing down
- Use a finger or end of the rolling pin to press the pasta sheet into each well of the tablet
- Fill each well with filling
- Lay second pasta sheet on top of the first sheet with fillings
- Pat down the edges and center of the dough with your fingers
- Dust the surface of the top sheet of dough with flour one final time before cutting
- Grab your rolling pin and roll over the dough to cut the ravioli
- Remove excess dough from the perimeter of the tablet
- Lift the tablet and turn it upside down to remove the ravioli
- Sprinkle the freshly cut ravioli with flour while it waits to be cooked!
