Radicchio is such a nice addition to any salad. The old Vermonters joke that this use to be a simple vegetable before it was given a fancy Italian name. They know it as Red Chicory or Tansy.
This elongated cousin of chioggia radicchio is amazing grilled or broiled and pairs well with sausage and cheese.
Store in a plastic bag in the refrigerator.
Radicchio is a bitter 'green' with a touch of spice. The leaves are actually a dark red-magenta with a white base and white veins. It grows in a head form similarly to cabbage with loosely wrapped leaves.
