The perennial plant is frost-resistant, durable and develops up to 2 metres high rungs that grow up to autumn. The tubers then have approx. The size of a potatoe.
In the middle of March, the tubers are planted. The harvest is then done in September. Topinambur can also be planted all year round, so only the harvest shifts.
Organic topinambur is grown and harvested by us. Topinambur has a slightly nutty taste and can be processed in many ways. Whether baking, cooking, steaming or for a salad. Of course, you can plant the tubers as well. The topinambur (botanica: Helianthus tuberosus L. ), also called earthlamp or Jerusalemartichoke, is a small floral tubular sunflower that came to Europe around 1600. The topinambur tastes slightly sweet-notty and has the consistency of a root. Topinamburkollen peel like potatoes, you can then grate them raw over a salad for example. You can also boil the tubers such as potatoes, steam or puree. You can then conjure up great and versatile dishes such as topinamburbuffer or a delicious curry topinambursoup.
